Easy Protein Pancakes (Gluten-Free)
- 1/2 c. rolled oats, uncooked
- 1/2 c. 2% cottage cheese
- 4 egg whites
- 1 tsp. vanilla extract (optional)
Blend all ingredients in blender. Cook on preheated skillet using nonstick spray. Makes 4-5 small pancakes.
Optional toppings: Nut butter, fruit, real maple syrup, or sugar-free syrup (depending on your calorie/macro needs)
